Fresh Stuffed & Grilled Avocado

This is a light Summer Classic!

Ingredients

4 Medium Avocado
1 red onion
Grape Tomatoes small pkg
white vinegar
4 Jalapeno
pinch Minced Garlic
salt
pepper
1 small bushel cilantro (5 or so small stalks)
2-3 limes
1 bottle your choice of hot sauce
agave

How To:

MAIN:
Halve the Avocado's and pull the pit out

Cut a slight flat place to the bottom side of each halve so they sit flat for plating later

Cut a few lines across at angles the avocado for good grill markings and flavor seepage.

Heat the grill on high heat and place the halved avocado on the grill face down for just a couple minutes and turn to get good grill marks and cross hatch marks.


TOPPING:
Halve & quarter the grape tomatoes

Finely chop 1/4 medium red onion

finely chop 1 to 4 jalapeno's as desired for flavor/heat

Add a sprinkle of minced garluc

Add a pinch of salt

Add a generous amount of pepper

Chop the cilantro finely and add as desired

Stir the mixture well adding a kiss of white vinegar or optionally lime juice

Place the mixture in the pit and on top of each of the avocado 

Then a slight touch of salt on top


DRIZZLE:
A mixture of Lime juice, agave and hot sauce to taste and drizzle on top of avocado

Then crumble some tortilla chips and sprinkle lightly over each one

Finally serve
