Loaded Potato Wedges

Take your air-fried potato wedges to the southwest with these loaded potato wedges.

I was home on a Saturday and just milling around the kitchen thinking about fixing some potato wedges.  So I got a little creative and put some corn and tomatoes in a skillet and put a sauce together and my wife and I love this dish.  We eat it as a snack or a meal depending on the occasion.

Ingredients

Potatoes:
4-5 Organic Russet Potatoes
3-4tbs Balsamic Vinegar
2 cups water
3tbs Garlic Powder
3tbs Minced Onion
3tbs Italian Seasoning or Basil
2tbs Lowry's Seasoning Salt (or to taste)

Corn and Tomato topping:
2 ears of organic corn cut or 1-15oz can of organic corn or 1/2 bag frozen organic bag of corn
2 coarse chopped tomatoes or 1 can of organic diced tomatoes.

Lime Crema:
1 bottle of Walden Farms Ranch Dressing
1 container or fresh-made guacamole
1 bottle lime juice or 3-4 fresh limes juiced
1 container slap your mamma (to taste)

PREP:

STEP 1:

STEP 2:
Put all the corn and tomatoes into a non-stick skillet.  If using fresh cut corn and tomatoes add a 1/2 can of sauce.  Then heat the pan over medium-high heat adding 3tbs of vinegar and some slap-ya mamma to taste.  If you want to minimize heat just use a little and add some seasoning salt.

STEP 3:
Cook the mixture down until it is really thick and maybe even sticking to the pan.  Once it's made a little bit of a mess in the pan use just a little added water to the skillet to glaze it and release it from the pan and continue this process adding the remaining tomato sauce if fresh with the water until it looks as pictured or smells good.
NOTE - make sure not to over-cook the corn to the point it begins to shrivel etc.

STEP 4:
While the corn/tomato mixture is cooking put 6-9oz as desired of the ranch into a bowl and then add 3tbs of guacamole to the bowl and stir until smooth.  Then add 2tsp of lime juice (1 lime) to the bowl and 1tsp of slap ya mamma.  Stir again until smooth.
(feel free to mix until you achieve desired consistency and taste.) 

STEP 5:
Place the potatoes on a plate then top with the corn and add the crema as desired.
NOTE - we use the remaining crema as a dip for additional potato wedges

IMPORTANT NOTES:
1.  The Walden Farms Ranch is great for a plant based eater, however it does contain processed food.  Particularly Sucralose.  So just something to be aware of depending on how strict you are on your WFPB journey.
