Matt's Tasty Veggie Sliders

These are a great vegan/WFPB version of 10 million different ways people use sliders!

Ingredients

1 loaf of wheat based or gluten free vegan slider buns
1 container of at least 8 to 16oz of guacamole
1 container of at least 8 to 16oz of hummus (either pine nut, original or garlic)
1 container of minced garlic
1 jar of dijon mustard
1/2 bananna squash (cut thinly into half-moon shapes)
1/2 zuchinni (cut thinly into half-moon shapes)
16 chopped or mandolin sliced thin carrots
1 yellow onion
1 yellow bell pepper
1 red bell pepper
3tbs of red wine vinegar
lime juice
4tbs basil

How To:

MAIN:
Slice the slider loaf in half

Cover the bottom half of the loaf with guacamole

Cover the top half of the loaf with hummus and mix in some minced garlic for more flavor

Put some dijon mustard lightly across the to of this mixture

Saute all the veggies, 1/2 squash (cut thinly into half-moon shapes), 1/2 zucchini (cut thinly into half-moon shapes), onion and peppers using the vinegar and seasoning w 2 Tbs of basil, some seasoning salt and a small amount of fajita seasoning.

Place bottom half of the loaf in a baking pan

Cover the bottom half w all the grilled veggies

Place the top of the loaf on the top of the menagerie


TOPPING:
in a bowl put 1 cup of hummus

3Tbs of lime juice

2 Tbs of Dijon Mustard

Put the Basil

Mix together

Use a basting brush and liberally cover the tops and sides of the sliders


COOK:
Place in oven covered w foil for 10min at 350

then remove foil and cook for an additional 12min at 350

finally cut w pizza roller after cooling for a minute

FOOD FOR THOUGHT:
This is great served cold or hot!

It's even better the second day!
