Vegan Seafood Spread

Vegan Seafood Spread  -  (and more)

This is a great dip for parties or dinners coupled with a great stuffing for a pita sandwich or wrap
(definitely best as a dip with Wheat Thins)

I wanted to have a lunch meal that would be light and refreshing like having a cold lunch-time sandwich.  This like my other pita stuffers and wraps fits the bill.

Ingredients

Hummus (original or garlic) - 5oz
Plant Based Mayo (in a jar...no squeeze bottle - too thin) - 1/4cup + 3tbs (7tbs)
Lemon Juice - 4tsp
Horseradish finely grated - 1/2cup
Old Bay Seasoning - 4.5tsp
Minced Garlic - 1/2tsp
Baby Dills - 6
Small/Medium Sweet Onion - 1
Baby Carrots - 24-32
Small Organic Brussel Sprouts - 12-16 (or 2cups halved)
Small Honey Crisp Apples - 2

HOW TO:

FILLER: 
Cut into small cubes apples, onion and put into food processor

Then add carrots and sprouts to processor and chop until rough chunky but small.

Add the pickles to the processor and pulse until mixed in as well without overdoing the main mix.

Empty contents of food processor into a mixing bowl.

Add mayo and mix in slowly.

Add hummus and mix in slowly.

Grate the horseradish and place in mixing bowl 

add minced garlic and old bay and mix into bowl well.

The mayo/lemon-juice balance as well as the old-bay can also be altered to taste.

Adjust all ingredients labeled “to taste,” as stated. 
(you may have to play a little) 

DISHES: 
Cut Pita in two pieces then use a plastic knife or the like to spread the pita open and add desired amount of filling. 
Tastes great with Veggie Straws. 

Use in a Spinach Wrap or Tomato Basil Wrap.

Use as a Dip with Wheat Thins.
