Grilled Veggie Cuban

An Everyday Classic - Extremely Satisfying

I started making this sandwich in response to a sandwich I had at a health food and juicing spot not far from where we live.  It turned into a veggie translation to one of my favorite sandwiches from my meat-eating days.

Ingredients

Pita bread – 1 loaf 
Garlic based hummus – to desired 
Guacamole – as desired 
Red Bell Pepper – as desired 
Yellow Bell Pepper – as desired 
Red Onion – as desired 
Sandwich pickle slices - 4 
Everything bagel – as desired 
Garlic powder – as desired 
Coconut oil spray (if desired) 

How To:

Cut the loaf in half then pull apart each side spreading the hummus and guacamole on it topping with "Everything Bagel" and garlic powder on both sides (important to do this first).

Then add all other ingredients using a pickle as the top and bottom layer for each side of each half of the pita bread.

Spray oil on pan (or none for WFPB on good non-stick surface) to grill sandwich…flip as needed...going a little longer than it feels like you should.
  
Add Veggie Straws on the side as desired.
