Jalapeno's:
20 large Jalapeno's
4 Tbs Onion Powder
4 Tbs Nutritional Yeast (then to taste)
1.5 Tsp Seasoning Salt
1.5 Tsp Garlic Powder
1 Tsp Paprika
3 Tbs Dried Cilantro
1/2 Tbs Ground Cumin
1 Tsp Cayenne
2 Tsp Lemon Juice
5 oz Garlic Hummus
2 - 7-9oz Bag of cooked riced cauliflower
1 3/4 can of rotel
8 Tbs of Vegan Ranch (I use Walden Farms)
1/2 Can of Corn
3 Cups prepared Refried Black Beans
1 Package Vegan Egg Roll Wrappers
Salsa of your choosing
Optional: Vegan Cheese Substitute
PREP:
STEP 1:
Half the Jalapenos lengthwise and use a grapefruit spoon or something like that to clean out the insides of it to make a boat for the filling.
- be sure to save the filling including seeds if you wanna make it a spicier affair
STEP 2:
Once they are all cleaned out use a pan and lay out all the jalapenos face down and broil for 5-8min.
- the key here is to slightly pull out just before they really blister because in this scenario we want them to have that roasted taste without losing the ability to hold the filling.
STEP 2a:
SKIP IF YOU DON'T WANT EXTRA SPICE
Take the cleaned out filling from the jalapenos and load into a blender and pulse chop until finely chopped.
WARNING: it is easy for your throat to become irritated by the release of all the oils inside the blender. So be careful when you are opening the blender and be quick to add to the mix once you do so the concentration of the peppers doesn't cause you an issue. I typically try to just wait until i'm ready to add it to the filling mix that way it doesn't inundate the air and cause family members any issues.
Step 3
Start assembling the mix -
Cook the pre-done cauliflower bags and poor them into a mixing bowl.
Step 4:
Open and drain both cans of rotel and poor 1 3/4 can into the mixture
Step 5:
Add the hummus, refried beans, and corn to the mixture
Step 6:
Add all the spices to the mixture and stir until desired consistency. You don't want it too runny or it wont' setup nicely.
Step 6a:
Add 1/2 of the jalapeno chopped filling if desiring spicy version and mix in. (again be careful of the fumes as they can really irritate the throat and airway etc.)
Step 7:
Use a spoon to add the filling to the roasted jalapeno's and set them back on the pan right-side up (obviously).
Step 8:
Wrap the Jalapeno's in egg roll wrappers
Step 9:
Cook in oven at 400 degrees for 10-12minutes.
FINALLY:
Add some of your favorite salsa if you'd like and go to town.
IMPORTANT NOTES:
1. To make thicker you can use more nutritional yeast and onion powder as desired.
2. You should have a good portion of the mix leftover. I do that on purpose as I think the filling is a perfect dip for my frito's scoops.
3. Change it up to your liking
