Tasty Pasta Salad

Tasty Italian Pasta Salad (w/Organic Gnocchi)

This is a fantastic WFPB, non-oil based Italian pasta salad.

Ingredients

SALAD
1 Package (8oz) Chickpea Rotini Pasta
1 Package Simple Truth Organic Gnocchi (8oz)
about 2oz chickpea Spaghetti Pasta
1 Cup Red Onion
8oz Grape Tomatoes
1/2 Cucumber
1/3 Cup of Olives (if desired)
Capers if desired
1/4Cup fresh parsley
2 cups halved Red or Black Organic Grapes (seedless)
1 Grouping of Organic Radishes Sliced Thinly

DRESSING
4 Tbs Red Wine Vinegar
4 Tbs fresh Lemon juice
1/2 Cloves of Garlic (more if it's me)
1.5 Tbs Dijon Mustard
1/4 Tsp Salt

HOW TO MAKE:

PASTA: 

First:
Cook Pasta and Gnocchi and let cool for 15-20min in large bowl.

Second:
Combine all the salad ingredients in the large bowl above:
-  Pasta, Gnocchi, Spaghetti, Onion, Tomatoes, Cucumber, Olives (if desired), Capers, Parsley, Red or Black Organic Grapes, 
    and Radishes.

DRESSING: 

First:
Combine The Red Wine Vinegar, Lemon Juice, Garlic, Dijon Mustard and Salt mixing together in a separate bowl.

Second:
Pour desired amount of dressing over salad mixture and stir and mix in good.

HOW TO EAT OR SERVE THIS DISH!!!
Serve chilled as a meal, a side dish or as a salad topper.
It's a fantastic add no matter the choice.
