Filling:
First:
In one pan peel and cut potatoes into 1" or so pieces and place in pan/skillet or pot and just cover with water.
Then add italian Seasoning, a couple of splashes of red wine vinegar and garlic powder.
Then once the potatoes are extremely fork tender take off heat and drain water
Second:
Add sliced onions to skillet for saute' with several splashes of Red Wine Vinegar adding a small amount of water as needed until begins to become translucent.
Then add 2tbs of minced garlic, carrots and zucchini filling and saute with the rest of the filling.
Then continue as it begins to stick to pan with a couple splashes of water to deglaze and keep cooking until it's all good.
Finally add the potatoes and the saute'd materials in a mixing bowl and add 1/8 to 1/4 of almond milk and mash the potatoes with all the filling
Third:
Halve the Zucchini's and scoop the center out of each half.
Then put the half-boats on a pan and warm the oven up to broil and broil them for 12 to 15min or just when they start to see them getting spots on them.
Finally:
Then once cooled a bit...scoop the filling and stuff the boats.
Then add hummus across the top and sprinkle with paprika.
Finally cook the boats on 400f in oven again for 15min
LAST THING:
Top with guacamole
