Tasty Zucchini Rolls

Tasty Zucchini Roll

I used the same filling as my pita stuffer and Veggie Stuffer and made a fantastic Zucchini roll.  You could use these as a snack, a meal, or appetizers.

Ingredients

3-4 Large Zucchini
Toothpicks
Garlic based hummus (store bought or homemade) – 12oz 
Guacamole – (store bought or homemade) – 6-8oz to taste 
Red Bell Pepper – 2/3 Pepper – diced 
Yellow Bell Pepper – 1/2 Pepper – diced 
Green Bell Pepper – 1/2 Pepper – diced 
Red Onion – 1/8 cup – chopped 
Pickles – 4 – chopped large pieces 
Organic Brussel Sprouts – 6 – chiffonade 
Lime Juice – 6tbs 
Minced Garlic – 2.5tbs 
Low Sodium Slap ‘ya Mama – 1tbs 
Chopped cilantro – 1/8 cup – chopped finely 
Baby Carrots – 16 – julienne 
Add Pickle-Juice – as needed to taste 

HOW TO:

FILLER: 
First combine the hummus & guacamole in a bowl. 

Then cut the vegetables adding them to the mixture as you go. Finally add the remaining ingredients and mix them all together. 

Adjust all ingredients labeled “to taste,” as stated. 
(you may have to play a little) 

MAKING THE ROLL: 
Slice the Zucchini lengthwise.  Then place the zucchini on a plate to ready for assembly.  

Scoop out the desired amount of filling onto the the zucchini, roll and press a toothpick through gently to make sure it doesn't break the zucchini.  

Finally sprinkle with "Everything Bagel" spice and serve cold.  

NOTE:  It can get messy with the rolling of the zucchini.  I like to eat the zucchini right off of the toothpick, that keeps the eating very clean.
