Vegan Mexican Pasta

Lyndsay's Vegan Mexican Pasta

This is a fantastic dish that can be customized into many different flavor profiles as desired!

Ingredients

1 - 8oz box of chickpea pasta (spiral pasta pictured by not required)
1 - can of organic black-beans rinsed
6-8Tbsp of lime juice
1  - small bunch of fresh cilantro finely chopped
1 - red onion chopped finely
1 - green onion chopped finely
2Tbsp Cumin
2Tbsp Chili Powder

How To:

PREP:

Cook the pasta as instructed on the box.  While cooking dice up the onion, cilantro green onion and halve the lime if fresh.

Cook the black beans until starting to split

Drain the pasta in bowl for final assembly.

Rinse 75% of extra juice on beans before adding to the pasta.

Add in beans, chopped veggies, lime juice and spices.
