REDNECK PO-BOY

I LOVE THIS SANDWICH!

I've been looking for a sandwich for some time that would give me the flavors of a New Orleans Style Po-Boy combined with my vegan redneck personality.  This one hit the spot.   The good news is you can adjust a few ingredients and make it your own without much work at all.

INGREDIENTS:

BREAD
Ciabatta loaf – 1 pkg 

REDNECK SPREAD
Garlic based hummus (store bought or homemade) – 8oz 
Plant Based shredded Cheese - 1/8cup
Walden Farms (or any Vegan) Ranch Dressing - 8tbs

REDNECK VEGAN SLAW
Garlic based hummus (store bought or homemade) – 12oz
Red Bell Pepper – 2/3 Pepper – diced 
Yellow Bell Pepper – 1/2 Pepper – diced 
Green Bell Pepper – 1/2 Pepper – diced 
Red Onion – 1/8 cup – chopped 
Pickles – 4 – chopped large pieces 
Organic Brussel Sprouts – 6 – chiffonade 
Zuchinni Squash - 1 - Chopped
Red Grapes - 1.5cup - Chopped
Lime Juice – 6tbs 
Minced Garlic – 2.5tbs 
Low Sodium Slap ‘ya Mama – 1tbs 
Chopped cilantro – 1/8 cup – chopped finely 
Baby Carrots – 26 – julienne 
Add Pickle-Juice – as needed to taste 

REDNECK VEGAN LATKES
3 medium potatoes shredded course
6 tbs of chickpea flour
2.5tbs of lemon juice
2 tbs nutritional yeast
4tbs of onion powder
1tbs of garlic powder
4 cloves minced garlic
4tbs of franks hot sauce
2tsp Slap Ya Mamma
1tsp Dried Cilantro
4tbs Corn Meal
6tbs Lemon Juice
2tbs Holic Jalapeno
3tsp Dill
1tsp Paprika

VINEGAR WASH
1/8Cup Balsamic Vinegar

HOW TO:

BREAD: 
I used a Ciabatta loaf but you can use Hogie Bread, pita bread or whatever you like.

SPREAD: 
Take the 8oz of Garlic based hummus and add to a bow with the Plant Based shredded Cheese and
Walden Farms (or any Vegan) Ranch Dressing.  Put into a resealable container to make several sandwiches at your convenience.

FILLER: 
First Combine the Garlic based hummus, Red Bell Pepper, Yellow Bell Pepper, Green Bell Pepper, Red Onion, Pickles, Brussel Sprouts, Zucchini Squash, Red Grapes, Lime Juice, Minced Garlic, Low Sodium Slap ‘ya Mama, Chopped cilantro, Baby Carrots, and Pickle-Juice as needed to taste.

Finally Mix together and add a little salt and pepper as needed and place in resealable container for use later in sandwiches.
 
LATKE SMASH/BALLS:
Mix the potato mix together and set aside using a tsp per piece and roll it in your hands in to balls and put into air fryer basket.  Cook the balls 10-12min at 400-420 degrees.

Adjust all ingredients labeled “to taste,” as stated. 
(you may have to play a little) 

MAKING SANDWICH: 
Cut Ciabatta into desired sizes for your sandwich and add the Redneck Spread to each side.  Once ready crumble the Air Fried potato balls and make a good layer of them on the bottom side of the bread.

Then add a healthy/heaping portion of the Redneck Vegan Slaw on top of that.

Finally put the top piece of bread on.  Followed by brushing carefully a bit of balsamic vinegar on the top and bottom of the sandwich.  Finally either wrap and refrigerate for warming or cool eating later.  Likewise it's great to eat on the spot heated with an air fryer, panini press, pan fry or even cold.  Whatever is your groove.

Optionally:
Leave off plant-based cheese to lose some sodium and oil if strict WFPB.
