Vegan Tater-Totty Casserole

VEGAN TATER-TOTTY CASSEROLE

This one i tried to make one way...and ended up loving the way it tasted when I messed it up.

Credit to Vegan Blueberry for the idea...i just changed it up by accident and liked it.

If you're wondering this is the recipe I started with:

INGREDIENTS:

INGREDIENTS:
1 Diced Yellow or Sweet Onion
3 Cloves Minced Garlic
3 Tsp of Salt

2 Cups of Water
1.5 Cup Raw Cashews
8 Tbs Chickpea or Almond Flour
4 Tbs Braggs Liquid Aminos

8 Tsp Onion Powder
8 Tbs Nutritional Yeast
1.5 Tbs Garlic Powder
1 Tbs Basil

1 Bag Frozen Mixed Veggies
1 1/2 Cup Riced Cauliflower or Ground meat substitute

1 Bag of Tater Tots (frozen vegan are the easiest)

HOW TO:

Step 1: 
Preheat the oven to 425

Step 2: 
Saute the onion, minced garlic and salt in a pan using water or a small amount of vegetable broth until slightly brown and tender.

Step 3: 
Add to the blender cashews, flour, onion powder, garlic powder, basil and water and blend until completely smooth..

Step 4: 
Add the frozen veggies over the sauted onions etc and mix in until tender adding water if needed to help cook...but don't over do it.

Step 5: 
Place the veggie and onion mixture into the blender with the already blended mix.  Mix until smooth.

Step 6: 
Poor mixture into pie pan or dish while leveling out the mixture.

Step 7: 
Top the mixture with the tater tots until covered.

Step 8: 
Place in oven uncovered and bake for 35-40min until mixture and tots are golden brown.

The key is a thick mixture...rather than a gravy...if you rather a gravy use
