1 Sweet Onion diced
1 15oz Can garbanzo beans/chick peas drained
1 15oz Can black beans partially drained
1 15oz Can sweet corn drained
1 32oz Container Veggie Broth/Stock
8oz Salsa
Juice of 1 Lime
1/8 cup Cilantro Fresh or 1tbs Dried and Chopped
1tbs Cumin
2-3 cloves minced garlic
Filling:
First:
Dice the onion
Second:
Add the onion and all other ingredients to a slow cooker and stir.
Third:
Set on low for 8hrs.
Finally:
Serve with chips, avocado, or any other toppings you'd like. I always eat with a soft tortilla.
