Veggie Wrap

This is just a twist on the Veggie Pita Stuffer...and it's a fantastic way to avoid the extra calories or for those who need it an easy way to avoid gluten in this already very light and healthy dish.

Ingredients

Head of Lettuce – 1 pkg 
Garlic based hummus (store bought or homemade) – 12oz 
Guacamole – (store bought or homemade) – 6-8oz to taste 
Red Bell Pepper – 2/3 Pepper – diced 
Yellow Bell Pepper – 1/2 Pepper – diced 
Green Bell Pepper – 1/2 Pepper – diced 
Red Onion – 1/8 cup – chopped 
Pickles – 4 – chopped large pieces 
Organic Brussel Sprouts – 6 – chiffonade 
Lime Juice – 6tbs 
Minced Garlic – 2.5tbs 
Low Sodium Slap ‘ya Mama – 1tbs 
Chopped cilantro – 1/8 cup – chopped finely 
Baby Carrots – 16 – julienne 
Add Pickle-Juice – as needed to taste 

HOW TO:

FILLER: 
First combine the hummus & guacamole in a bowl. 

Then cut the vegetables adding them to the mixture as you go. Finally add the remaining ingredients and mix them all together. 

Adjust all ingredients labeled “to taste,” as stated. 
(you may have to play a little) 

MAKING THE WRAP: 
Wash the head of lettuce first.  Then pull a full leaf of lettuce off the head and gently flatten the stalk area of the lettuce leaf.  

Finally scoop out the desired amount of filling into the wrap, fold over and enjoy.

NOTE:  It can get messy with a thin layer of lettuce.  Sometimes I overlap them with two or three layers of lettuce in order to get better layer of lettuce for the wrap.
